To a specially made gin, packed with citrus and spicy juniper, are added sloes and spice. Then, to allow these flavours to mingle to perfection, the gin and its fruit and spices are left for at least three months to mellow. A month before bottling, sweetness is gradually introduced, using honey to amplify the fruitiness of the sloes without hiding their tart character. This gin liqueur is
